Texture Profile Analysis
Definition
An instrumental method that quantifies mechanical textural properties of a food sample by applying controlled compressive deformations (commonly a two-cycle compression) and recording force–time or force–distance responses to derive parameters such as hardness, cohesiveness, springiness, adhesiveness and chewiness.
