Moisture Migration

Movement of water (liquid or vapor) between food components, or between food and packaging, driven by gradients in water activity, vapor pressure, or capillary forces, that changes local moisture content and thereby alters texture, promotes or inhibits microbial activity, affects chemical stability, or modifies shelf life.
