Food Microstructure
Definition
The spatial organization and hierarchical arrangement of food components (phases, particles, interfaces and networks) across microscopic and submicroscopic length scales; this architecture controls mechanical behaviour, sensory perception (texture, mouthfeel), mass‑transfer, stability and the functional release or protection of nutrients and bioactives.
