Emulsion Droplet

A discrete, bounded volume of the dispersed liquid phase within an emulsion, surrounded by an interface in contact with the continuous phase; its size, composition and interfacial properties determine interfacial area, internal pressure and the kinetics of coalescence, mass transfer and release of encapsulated substances.
