Definition
A chemical index that estimates the concentration of certain secondary lipid‑oxidation products—principally aldehydes—by measuring the absorbance of a reaction product formed between p‑anisidine reagent and aldehydic compounds; reported as the Anisidine Value (AnV or p‑AnV) on a conventional numeric scale and used complementarily with Peroxide Value to assess oxidation status.
