Pulsed Electric Field Processing (PEF)

A nonthermal processing method applying short, high-voltage electric pulses to food placed between electrodes (typically pumpable or thin-layer products) to induce membrane permeabilization (electroporation) of microbial or plant cells, producing microbial inactivation or facilitating intracellular component extraction while limiting bulk heating.
