The multi-component matrix of polysaccharides (cellulose, hemicelluloses, pectins), structural polymers (lignin in some tissues) and associated proteins that surrounds plant cells; its composition and physical integrity determine tissue texture, water-holding capacity, mechanical resilience and the functional behaviour of dietary fiber in foods.
