Emulsification

The process by which one immiscible liquid is dispersed into another as fine droplets and stabilized against coalescence, typically by reducing interfacial tension with surfactants and applying mechanical energy to create a droplet population.

The process of dispersing one immiscible liquid phase as small droplets within another (typically oil in water or water in oil) and stabilizing that dispersion by reducing interfacial tension—commonly achieved with emulsifiers and mechanical energy—to produce a mixture with altered texture, appearance and stability.
