Differential Scanning Calorimetry

Thermal analysis technique that measures the difference in heat flow between a sample and a reference under a controlled temperature program to detect and quantify thermal events in food materials — such as melting, crystallization, glass transitions and enthalpic relaxations — reporting transition temperatures and associated enthalpies under specified heating/cooling rates and sample conditions.
