Definition
A physicochemical transformation in which native starch granules, when heated in the presence of sufficient water, absorb water, swell, lose native crystalline order, and release soluble components (notably amylose) to form a viscous paste or networked gel; the process is distinct from enzymatic hydrolysis and from retrogradation that follows cooling.
