Titratable Acidity (TA) is the quantity of proton‑donating (acidic) species in a food or beverage sample determined by titration with a standardized base to a defined endpoint (specified pH or equivalence), reported as acid equivalents per unit mass or volume (for example grams of citric acid per 100 g).
