The deterioration of food quality or acceptability caused by chemical, physical or biological processes that change sensory, nutritional or safety attributes to the point that the food is judged unsuitable for its intended use; spoilage may involve off‑odours, texture loss, discoloration, souring or visible decay and can be driven by enzymatic reactions, oxidation or microbial activity.
