A controlled predictive laboratory method that exposes a food product to elevated environmental stresses (e.g., temperature, humidity, light, oxygen) for a shortened period in order to increase the rate of chemical, physical or biological deterioration, fit a degradation model, and extrapolate an estimated shelf-life or kinetic stability under normal storage conditions.
